Recipe for Step by Step Cauliflower Pickle

This is a Recipe for Step by Step Cauliflower Pickle or in Hindi as Gobhi Ka Achar. People who fancy sweet pickles will enjoy this eating this pickle. I have given the preparation method in a systematic manner to make the preparation easy.

1250 Grams Cauliflower
1250 Grams Turnip
450 Grams Mustard Oil
125 Grams Garlic
225 Grams Ginger
450 Grams Onions
40 Grams Pepper
15 Grams Cardamom
15 Grams Cinnamon
15 Grams Cloves
30 Grams Aniseed
225 Grams Tamarind
200 Grams Mustard Seeds
200 Grams Salt
450 Grams Zagri (Gur)
60 Grams Red Chilies
2 Cups Vinegar

Cut Cauliflower into large pieces.
Wash and boil once.
Place in basket and dry for half an hour in sun.
Grind Garlic, Ginger and Onion separately.
Place Oil on fire and bring to boil.
When hot, brown Garlic, Ginger and Onions.
Remove from fire.
Grind other hot Masalas and mix in Oil.
Add ½ quantity of Vinegar to Zagri (Gur) and mix.
Immerse Tamarind in same quantity of Vinegar i.e. 225 Grams (Tamarind in remaining Vinegar) rub and remove skin.
Add together Masalas, mix in Oil, Zagri and Tamarind and add Salt.
Immerse and smear boiled Vegetable in Masala and bottle.
Place in sun for two days. Ready in four or five days.
