This is a recipe for preparing spicy Green Chili Pickle. This is another authentic Indian recipe called Hari Mirch Ka Achar in Hindi and Hirvya Mirchi Che Lonche in Marathi, which is served as an add on with the main course.
1 kg Chilies
750 gram Vinegar
125 gram Garlic pieces
125 gram Salt
25 gram Mustard [Rai] 25 gram crushed Fenugreek [Methi] seeds
Grind the mustard and add the crushed fenugreek and garlic pieces.
The prick the chilies.
Then boil the vinegar and add salt, fenugreek, mustard and garlic.
Let this mixture cool.
Then add the chilies and bottle them.
Do not expose to the Sun. Keep for about a week indoors before serving.
