This is a simple to follow step-by-step Recipe for preparing at home tasty and delicious Restaurant Style Cashew nut – Green Peas Curry or Kaju Matar Gravy as it is known in the Hindi language and Kaju Hirvya Matar Cha Rassa in Marathi.
The Kaju Matar Gravy, which uses a Coconut Masala, is a rich gravy preparation, which tastes great with Parathas, Rotis or Puri.

Kaju Matar Gravy Preparation Time: 40 Minutes
Serves: 4 Persons
1-Cup Cashew nuts
One Cup Green Peas (fresh)
1 Teaspoon Sugar
For the Masala
½ Cup Coconut (shredded)
½ Cup Coriander Leaves
Five Green Chilies
Seven Garlic Petals
2 Big size Green Tomatoes (chopped)
For the Tadka
1 Tablespoon Oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
¼ Teaspoon Asafoetida
Salt as per taste
Boil the Green Peas; soak the cashew nuts for an hour.
Mix the shred Coconut, Coriander, Green Chili, Garlic Petals, Green Tomatoes and grind into a fine paste.
Ina kadai heat the Oil and add the Mustard Seeds, Cumin Seeds, and Asafoetida and grounded Green Masala, mix it well and sauté the Masala on a slow flame until it become dry.
Then add the cooked Green Peas, Soaked Cashew nuts, Salt, Sugar and ½ Cup of water. Mix it well and cook for five minutes on a slow flame.
Serve hot with Chapatti/Puri/Paratha.
