Recipe for Fresh Ripe Mango Rice

This is a Recipe for Fresh Ripe Mango Rice, another one of the recipes for the Mango season. This is sweet rice, which uses Fresh Mango Pulp as the main ingredient.

Included below in the Marathi Version of the same recipe, known in the Marathi language as Ambyacha Bhat, a specialty Maharashtrian rice preparation.

1 Cup Basmati Rice
2 Tablespoon Ghee
4 Cloves
5-6 Cardamom
1 ½ Cup Water
½ Cup Mango Pulp
Salt as per taste
1 Cup Sugar
A pinch Orange Color
2 Tablespoon Milk

Wash the Rice and keep it aside for 10-15 minutes. Mix the Milk and Orange color.
Heat the Ghee in a vessel and add the Cloves, Cardamom, Rice and fry for 3-4 minutes on a slow flame.
Mix the Water, Mango Pulp, Salt and boil, add to the fried Rice, and cook the Rice on a slow flame. Then add Orange color, Sugar and mix it well. Cook the Rice for 5 minutes on a slow flame.

आंब्याचा भात
साहित्य : १ कप बासमती तांदुळ, २ टे स्पून तूप, ४ लवंग, ५-६ वेलची, १ १/२ कप पाणी, १/२ कप आंबा रस, मीठ चवीने, १ कप साखर, एक चिमुट केसरी रंग, २ टे स्पून दुध

कृती : तांदूळ धुवून १०-१५ मिनिट बाजूला ठेवा. दुधामध्ये केसरी रंग मिक्स करा. जाड बुडाच्या पातेल्यात तूप गरम करून त्यामध्ये लवंग, वेलची, धुतलेला तांदूळ ३-४ मिनिट मंद विस्तवावर भाजून घ्या.

पाणी, आंबा रस व मीठ एकत्र करून उकळून घ्या व भाजलेल्या तांदळामध्ये मिक्स करा व मंद वीस्तवावर भात शिजवून घ्या. नंतर त्यामध्ये केसरी रंगाचे दुध व साखर घालून मिक्स करा. मग पाच मिनिट भात मंद विस्तवावर शिजवून घ्या.
