This is a Recipe for Spicy Sprouted Moong Usal, a Maharashtrian Green Gram preparation for the main course
1 ½ Cup Sprouted Moong (green gram)
1 Cup grated Coconut
¼ Cup Coriander Leaves
2 Green Chilies (chopped)
2 Table Spoon Lemon Juice
Salt as per taste
For the Tadka
2 Table spoon Oil
1 Tea spoon Mustard Seeds
2-3 Red dry Chilies
A pinch of Asafoetida
Take well sprouted Moong in a Vessel. Add enough Water to cover and add ¼ tea spoon Salt. Bring to a boil. Drain off Water and remove skin off the Moong as much as possible.
Mix Moong with Coconut, Coriander Leaves, Green Chilies, Lemon Juice and Salt.
Heat the Oil in a Kadhai and add Mustard Seeds, Red Chili, Asafoetida, pour prepared Moong and mix well.
