Recipe for Kashmiri Dum Gosht

This is a Recipe for preparting at home Slowly Cooked Kashmiri Dum Gosht. This is a traditional and authentic Meat dish from the Indian state of Kashmir.

Preparation Time: 60 Minutes
Serves: 5-6 Persons

Ingredients
1 Kg Mutton
1 Table spoon Poppy seeds
6 Almonds
A small piece of Ginger
1 Pod of Garlic
1 Tea spoon Pepper Corns
4 Cardamoms
3 Small sticks Cinnamon
½ Tea spoon Cumin Seeds
1 Tea spoon Turmeric powder
A small piece of green Papaya
A small bunch of Coriander leaves
Salt to taste
Ghee for frying

Preparation
Chop Mutton into steak sized pieces. Roast poppy seeds and Almonds and grind to a paste. Grind Ginger and Garlic to a paste. Grind Cardamom, Pepper, Papaya and Coriander leaves with Salt to taste.
Wash Meat and beat on a grinding stone.
Mix ground Masala with Peppy seed paste, Cinnamon sticks, Cumin seeds, and marinate Meat pieces in this mixture for an hour.
Heat Ghee in a frying pan add Meat pieces and fry for a few minutes.
Place in second container of pressure cooker with 2 cups of Water and cook well.
