Special Raita recipe for parties

This is a Recipe for preparing Special Party Ka Raita. This Raita preparation is a different from the ones given earlier.

4 Large Tomatoes
2 Large Onions
1 Cup Coriander Leaves (chopped)
2 Green Chilies (chopped)
1 ½ Tea spoon Sugar
Oil as Needed
3 Slices Bread
Few Raisins and Cashew nuts soaked in water)
½ Tea spoon Mustard Seeds and Cumin Seeds
3 Curry Leaves
4 Cups Fresh Yoghurt
Salt to taste

Boil Tomatoes in Water for a minute. Cool. Remove skin, chop and keep aside. Chop the Onions finely.
Heat three table spoon of Oil. Add Mustard and Cumin Seeds. When they begin to pop add Onion and fry till golden. Drain and add Cashew nuts and Raisins. Add Sugar, Curry Leaves, Chilies, Coriander Leaves and Salt to taste. Cook till a smooth paste forms. Cool completely and mix with Yoghurt. Check seasonings. Fry tiny squares of bread and cover the Raita with these croutons just before serving.
