Recipe for Szechuan Mixed Fried Rice

This is a step by stepRecipe for preparing typical Chinese Restaurant Style Szechuan Mixed Fried Rice . A very popular and in demand Chinese Rice Recipe.

6 Cups cooked Rice
6 Table spoon Chili Oil
3 Eggs
1 Cup chopped spring onion
¼ Cup Fresh Mushrooms quarted
1 Carrot finely chopped
½ Cup Chicken shredded
½ Cooked Prawns
1 Table spoon Soya sauce
1 ½ Table spoon Vinegar
Salt & Pepper to taste
Ajinomoto two pinches

Heat two table spoon chili Oil, beat Egg and scramble lightly, remove and keep aside. Add the remaining chili oil. When hot, add all the chopped vegetables, stir, and fry for two minutes.
Add Chicken prawns and stir fry for another two minutes, now add the cooked rice and sprinkle the Soya sauce, vinegar, salt, pepper and ajinomoto. Mix well. Remove from fire, transfer on to a serving dish, Garnish with the scrambled eggs and serve hot.
