Step by step recipe for Parsi Rice

This is a step by step recipe for preparing Vegetarian Parsi Rice. The Parsi Pulao main course rice preparation which is a specialty of the Parsi community.

2 Cups Basmati Rice
4 Cups water
6 Onion (slices)
½ Tea spoon Jeera
1 Tea spoon Sugar
5 Table spoon Ghee/Oil
Salt to taste

These ingredients crushed together
½ Tea spoon Pepper Corns
4 Cloves
4 Cinnamon
4 Cardamoms
2 Small pieces mace

Soak the cleaned Rice in 4 Cups of water and Salt for 20 minutes. Heat Ghee in a frying pan.
Add Sugar, when it turns brown, add Jeera and crushed spices.
Add Onions, Fry till brown. Add to the Rice, Cook for 20-25 minutes. Garnish with slices Tomatoes, Onion and Capsicums.
