Recipe for Mexican Vegetable Rice

This is a step by step recipe for preparing Mexican Vegetable Rice. A main course rice preparation done by me with a distinct Indian flavor.

2 Cups Basmati Rice
4 Cups Water
4 Onions
2 Capsicums (de-seed and cut in to thin strips)
2 Tomatoes (chopped)
6 Table spoon Refined Oil
2 Tea spoon Chili powder
8 Flakes Garlic
Salt to taste

Place Rice in the cooker. Add water and Salt, Chop Onions and Garlic finely. Heat Oil in a frying pan.
Add Garlic and fry well. Add Onions and fry till brown, Add Capsicum, Cover and leave for 3-5 minutes, Add to the Rice and cook for 20-25 minutes.
Add Chili powder. Mix gently and garnish with Tomatoes.
