This Is a simple to follow Recipe for preparing at home healthy and nourishing Pumpkin Soup or Lal Bhoplyache Soup as it is called in Marathi and Kaddu Ka Soup in Hindi. This Red Pumpkin Soup recipe given by me has that typical Indian taste and flavor.

Preparation Time: 30 Minutes
Serves: 4 Persons
3 Cups Vegetable Stock
1 Small Onion (chopped)
1 Kilogram Pumpkin
4 Tablespoon Coriander (chopped)
4 Tablespoon Fresh Cream
1 Tablespoon Butter
Black Pepper and Salt as per taste
Chop the Onion and the Coriander and keep them aside. Remove the skin and seeds from the Pumpkin and then chop it into ½” cubes.
Heat the Butter in a Vessel and add the chopped Onion and sauté for 2-3 minutes on a slow flame. Add the Vegetable Stock and the Pumpkin Cubes and then cover the vessel with a plate and cook for 10 minutes on a slow flame or until softened.
Then pour the mixture, Salt and Black Pepper Powder into a blender and blend it until smooth.
While serving the Pumpkin Soup garnish with the Cream, Chopped Coriander and Black Pepper Powder.
