Maharashtrian Style Bottle Gourd Skin Chutney

This is a Recipe for making at home tasty Maharashtrian Style Bottle Gourd Skin Chutney. This Bottle Gourd Skin Chutney can serve as a welcome add-on to the main course or be served along with South Indian Snacks or Batata Vada.

Preparation Time: 10 Minutes
Serves: 4 Persons

Ingredients
1 Cup Bottle Gourd (shredded)
1 Teaspoon Oil
2 Green Chilies
1 Tablespoon Coriander Leaves (chopped)
1 Teaspoon Ginger (paste)
¼ Cup Coconut (grated)
2 Tablespoon Ground Nuts
1 Teaspoon Cumin Seeds
1 Teaspoon Lemon Juice or 2 Tablespoon Curd
Sugar and Salt as per taste

Preparation
Wash the Bottle Gourd and peal the skin and then chop it finely.
Heat the Oil in a Kadai and add the skin of the Bottle Gourd and saute for two minutes on a slow flame. Remove from the flame and keep it aside for cooling.
Mix the Bottle Gourd skin, green Chilies, Coriander Leaves, Ginger, Coconut, Ground Nuts, Cumin Seeds, Salt and Sugar and grind into a coarse paste.
After grinding the Chutney pour the mixture into a bowl and add the Lemon Juice or Curd and mix it well.
Serve the Bottle Gourd Chutney with Idli or Dosa.
