This is a Recipe for preparing at home Drum Stick Gravy, a typical Maharashtrian Style Gravy preparation known in the Marathi language as the Shevgyachya Shenganchi Amti.

Ingredients
2 Drum Sticks (remove the skin and cut in medium size pieces)
1 Small Onion (chopped)
1 Small Tomato (chopped)
1 Small Potato (peel and cut in medium size pieces)
½ Teaspoon Garam Masala
Salt as per taste
¼ Cup Coriander (chopped)

For the Tadka
¼ Tablespoon Oil
½ Teaspoon Mustard Seeds
½ Teaspoon Cumin Seeds
¼ Teaspoon Asafoetida
¼ Teaspoon Turmeric Powder

For the Masala
½ Tablespoon Oil
½ Cup Coconut (grated)
1 Small size Onion (chopped)
7-8 Petals Garlic
1 Teaspoon Red Chili Powder

Preparation
For the Masala
Heat the Oil in a kadhai and add the Onion, Garlic, and fry for two minutes and then add the Coconut and fry for two-three minutes on a slow flame. Add Red Chili Powder and again fry for two minutes on a slow flame. Grind the Masala to a fine paste by adding water as required.
Heat the Oil in a Kadhai and add the Mustard Seeds, Cumin Seeds, and Asafetida, Onion and Tomato and fry for two minutes on a slow flame. Add pieces of the Drum Sticks, Turmeric Powder, Salt and fry for a minute. Add two cups water, grounded the Masala, Garam Masala and cover with a plate. Cook for ten minutes on a slow flame.
Garnish with the Coriander. Serve hot with the Chapatti.
