This is a Recipe for preparing Spring Onion chi Bhaji. Known in Marathi as Kandyachi Path, the vegetable preparation given below is a common everyday vegetable dish from Maharashtra.
2 Cups Spring Onion (chopped) (कांद्याची पात)
¼ Cup Onion (chopped)
1 Table spoon Tomato (chopped)
1 Small Potato (cut in medium size pieces) or Mushroom Slices
Salt as per taste
1 Table spoon Coconut (grated)
For the Tadka
½ Table soon Oil
1 Tea spoon Mustard Seeds
1 Tea spoon Cumin Seeds
¼ Tea spoon Asafoetida
1 Tea spoon Garlic (crushed)
¼ Tea spoon Turmeric Powder
Heat the Oil in a Kadhai and add the Mustard Seeds, Cumin Seeds, Asafoetida, Garlic, Turmeric Powder, Onion, Green Chilies, Potato, Tomato and then fry for two-three minutes on a slow flame.
Then add chopped the Spring Onion, Salt, two table spoon Water and cover with a inverted steel plate add some Water over the plate and then cook for ten minutes on a slow flame. Remove the plate and cook for two minutes on a full flame. Garnish with grated Coconut.
Serve hot with Chapatti or Bhakri.
