Recipe for Dodkyachi Bhaji (Ridge Gourd)

This is a Recipe for preparing at home Dodkyachi Bhaji (Ridge Gourd). A typical and traditional Maharashtrian Vegetable preparation for the main course.

500 Gram Dodka
Salt to taste

Masala for Filling
½ Cup Coconut (Shredded)
½ Cup Peanut powder
1 Tea spoon Garam Masala
½ Tea spoon Red Chili powder
½ Cup Coriander (chopped)
Mix it well and prepare a mixture

For Tadka
1 Table spoon Oil
1 Tea spoon Mustard Seeds of the pieces
1 Tea spoon Cumin Seeds
¼ Tea spoon Asafetida
¼ Tea spoon Turmeric

Remove the skin from the Dodkas and cut in one inch horizontal sized pieces and make an incursion like a plus sign on the pieces, this is to fill the Mixture into the cut pieces. Then fill the mixture in the Dodka pieces.
Prepare Tadka and then add the pieces of Dodka. Mix it well and cover with a lid and then cook for 7-8 minutes on a slow sim.
