This is a step by step Recipe for preparing restaurant style rich and tasty Vegetable Cheese Pulao. The Sabzi-Cheese Pulao is a delicious rice preparation using assorted vegetables and cheese. A great and much sought after party dish. The recipe for White Sauce has also been given separately.
1 Cup Basmati Rice
50 Grams Beans
50 Grams Carrots
50 Grams Cauliflower
50 Grams Green Peas
1 Medium size Potato
1 Medium size Tomato
1 Medium size Onion
2 Green Chilies
2 Tea spoon Coriander powder
Salt to taste
2 Table spoon Oil
Ingredients for the White Sauce
1 Cup hot Milk
2 Tea spoon Butter
2 Tea spoon Flour
Salt and Pepper to taste
4 Table spoon Cheese (grated)
Wash the Rice and then sauté the Rice in Ghee and prepare it.
Cut the Vegetables into medium sized pieces. Boil the Peas and Vegetables in Water with a pinch of Soda.
Boil and peel the Potatoes and cut into small pieces.
Chop Onion, Ginger and Green Chilies fine, chop the Tomatoes.
Heat the Oil in a skillet. Sauté Onion, Ginger and Chilies till light brown.
Add Coriander powder, Tomatoes and Salt and stir.
After that add Vegetables and Lemon juice.
Then prepare white sauce. Then add half portion of grated Cheese, Salt to taste and Pepper and then mix it well.
After that add the Rice in to the White Sauce.
Take a Oven proof dish grease the inside of the bowl with Butter. Spread the Vegetable mixture and press lightly. Then spread the Rice layer and the remaining grated Cheese.
After that bake in an oven at 150 C for 20 minutes.
Preparation of White Sauce
Melt the Butter in a pan and then add the flour to it. Stir till they both blend together for 2 minutes on a slow sim. Then add ¼ cup of hot Milk to it while stirring continuously. Do not allow lumps to be formed. After that add balance Milk in to it and mix it well and cook for 2-3 minutes on a slow sim.
Remove it from Gas and then add Salt and Pepper and mix it well.
The Sauce is ready.
