Recipe for Mixed Vegetable Chutney

This is a Recipe for Mixed Vegetable Chutney. A wholesome Chutney prepared using assorted vegetables along with some selected Indian spices.

Mixed Vegetable Chutney Preparation Time: 30 Minutes
Serves: 4 Persons

Ingredients
50 Gram Red Pumpkin
50 Gram Muli
50 Gram Sweet Potatoes
50 Gram Brinjals
½ Tea spoon Turmeric
½ Cup Sugar
1 Tea spoon Mustard Seeds
3 Red Chilies
25 Gram Tamarind
1 Table spoon Ground Nut Oil
Salt to taste
1 Cup Water

Preparation
First wash all the Vegetables and chop them, soak Tamarind and prepare a Pulp and keep it aside.
Heat Oil in Cooker and add Mustard seeds, Red Chili and all the Vegetables and fry till light brown in color.
Then add the Turmeric, Sugar, Tamarind, Salt and Water. Mix it well and cook on high pressure for 4-5 minutes and then 3-4 minutes on slow sim.
Serve with Parathas.
