This is another one of my recipes for preparing Carrot Pickle, Gajar Ka Achar in Hindi and Gajarache Lonche. This recipe Carrot Pickle is different from the one which had given earlier.
1 Kg Carrots
150 Grams Mustard Oil
50 Grams Ginger
1 Table spoon Sauf
50 Gram Salt
1 Tea spoon Red Chili powder
1 Tea spoon Turmeric powder
½ Tea spoon Asafoetida (Hing)
1 Table spoon Methi
Clean and wash Carrots, cut into long pieces, boil for 5 minutes, take them out and put on a clean dry cloth and allow to dry in the Sun. Heat Mustard Oil, fry Ginger pieces add Methi, Asafoetida, Sauf and Turmeric. Put off the flame add Carrot pieces, Salt and Red Chili powder. Mix well and fill in a jar.
