Recipe for Carrot Cutlets

This is a Recipe for preparing Carrot Cutlets. These Gajar Ke Cutlet as they are called in Hindi can be served either as a snack or as part of the main course.

250 Grams Carrots
250 Grams Pumpkin
250 Grams Potatoes
50 Gram Onion
3-4 Green Chilies (finely chopped)
Fresh Coriander
A pinch of Asafoetdia (Hing)
Salt to taste
Oil for frying

Grate Carrots and Pumpkin; boil Potatoes and wash. Heat 1 Tea spoon Oil and fry Onion slices; add green chilies and Asafoetida when brown, mix grated Carrots and Pumpkins, simmer till soft. Now mix washed Potatoes in the mixture and add Coriander leaves. Give desired shape and deep fry till golden brown. Serve hot.
