Crunchy and crispy recipe for Egg Rolls

This is a nice crunchy and crispy recipe for Egg Rolls or Anda Rolls at home. This makes a great breakfast or snack dish for Egg Lovers.

5 eggs
4 to 5 potatoes
½ bunch of fresh coriander leaves
1 tablespoon finely cut onions and green chilies
1 teaspoon of salt. pepper and red chili powder
1 cup bread crumbs to roll the egg rolls
1 beaten egg to dip the egg rolls
Oil for frying

Firstly boil and then mash the potatoes nicely. The heat 1 teaspoon oil in a frying pan and add the onion and the 5 eggs. Then add the coriander leaves and stir the mixture. Remove from the fire when the mixture thickens. Let it cool.
Then heat the oil and make round or oval shaped shapes from the mixture. Dip these rolls in the beaten egg and roll over the bread crumbs. Deep fry the rolls in the heated oil till they turn a nice shade of golden brown.
Serve hot.
