Recipe for Spinach Cutlet

This is a recipe for preparing crispy Spinach Cutlet. The Palak Ka Cutlet as it is called in Hindi is a rare and delicious Snacks dish, which is prepared with a Palak-Potato-Anda Stuffing can be served along with the main course.

20 big-sized Spinach leaves
½ Cup cooked Oil
For the filling
4 Potatoes – boiled and mashed
2 Green Chilies, finely chopped
1 Table spoon lime juice
1 Onion, finely chopped
1 Table spoon Coriander leaves chopped
1 Egg
Salt to taste

Put 1 Table spoon Oil in a frying pan. When it is smoking add the chopped Onion.
When it turns golden add the mashed Potatoes, Chilies, Coriander, Lime juice and Salt and fry well.
When it is absolutely dry the filling is ready.
Divide it into 10 equal portions, Spread one portion over a spinach leaf evenly, and Cover it up with another leaf. Dip in to beaten egg and shallow fry on a tawa or a non-stick pan like a Kebab.
Note – Instead of Potato filling one can have minced meat or Egg filling.
