Recipe for Rice Bukhari

This is a unique recipe for Rice Bukhari a popular Arabian Dish prepared using dry fruits meat and vegetables. A main course rice preparation in the nations of the Middle East, normally served as a main course dish along with other Chicken or Meat Dishes.

Preparation Time: 45 Minutes
Serves: 4 Persons

Ingredients
700 gram Meat or Chicken
2 big onions
2 Tomatoes
Salt to taste
½ tsp black pepper
½ tsp red chili powder
10-15 pieces raisins
10-15 pieces almonds
Carrot, Capsicums or other vegetables (optional)
400 gram rice
100 gram ghee or cooking oil

Method
Boil the meat, chop the onions & tomatoes, and take a pan, heat ghee or oil & fry onions, tomatoes & meat together. In case you are using the vegetables wash & cut the vegetables & fry them, also add salt, spices & some water for the gravy. Boil for 20 minutes & then take it off the fire and keep it aside.

Fry the nuts in ghee & keep aside, wash the rice in fresh water & sock it for 15 minutes. Pour rice in the meat mixture and add water which is double the quantity of rice, then keep the rice Bukhari on fire till all the water is absorbed.

Pour the rice in to a rice tray & garnish with nuts & raisins serve hot.
