Step by step Recipe for Bharli Vangi

This is a step by step Recipe for preparing at home authentic and traditional Maharashtrian Style Bharli Vangi (Stuffed Brinjal).
This recipe for making stuffed Brinjals or Bharli Vangi given in this article is one of the basic versions of this Maharashtrian Brinjal dish, which is consumed by a most ordinary folks as a part of their daily meals.

Preparation Time- 45 Minutes
Serves – 4 Persons

Ingredients
½ kg Small Brinjals
¼ Kg Onion (chopped)
¼ Cup Coconut (shredded)
1 Tea spoon Sugar
50 Gram Ground Nuts (roast and make a coarse powder)
¼ Cup Coriander
15 Gram Cashew nuts and Raisins
Salt to taste

For Tadka
2 ½ Table Spoon Oil
¼ Tea spoon Asafetida (Hing)
¼ Tea spoon Turmeric

Preparation
First of all take the chopped Onion, Coconut, Coriander, Sugar, Ground Nuts powder and Salt and mix them all nicely to make a mixture.
Make four vertical cuts from the top to half way of the Brinjal.
Then wash the Brinjal and fill one table spoon of the mixture in the vertical cuts.
Prepare Tadka and add the Brinjals. Mix it well and fry for 2-3 minutes.
Then add 2 cups of water and cook for 10 minutes on a slow sim. Serve with Rice or Paratha.
