Recipe for Brinjal Rice

This is a Recipe for preparing Brinjal Rice. The Baingan or Vangi Bhat is a traditional Indian rice preparation using Brinjal, which is served for the main course.

Ingredients
2 cup of Rice
4 cup water
1 cup Brinjal (cut medium size)
2 tea spoon Garam Masala
1 Onion (fine cut)

Masala 
Tejpatta, Laung, Black Pepper, Shahjeera
2 table spoon oil
Salt as per taste
Juice of 1Lemon
Coriander [finely chopped] & Coconut [grated]

Preparation
Wash rice 30 minutes prior to cooking, and keep aside.
Heat oil in a pressure cooker and put Masala, Onion, Brinjal & Rice and fry till color change in to light brown, then mix hot water, lemon juice, Garam Masala powder, Salt & wait for two whistles of the pressure cooker.
Spread Coriander & Coconut over the cooked rice and serve hot.
