Simple Recipe for Baingan Ka Raita

This is simple to follow step-by-step recipe for making at home Baingan Ka Raita, also called as the Aubergine or Eggplant Ka Raita. This Raita recipe, which makes the use of Baingan and Yogurt as the main ingredients should be useful for Baingan Lovers.

Preparation Time: 20 Minutes
Serves: 3-4 Persons

500 grams Baingan
1 small chopped Onion
½ teaspoon Chili Powder
1 teaspoon Garam Masala
2 Green Chilies
350 grams Yogurt[Dahi]
A little amount of Olive Oil
Salt as per taste

Rub the Olive Oil all over the Baingans and bake in a Microwave/Owen/Grill until they turn soft and tender.
After the Baingans cool down, remove the outer skin.
Then, nicely mash the Baingan and add the chopped Onion, Garam Masala, and Chill Powder.
Chop the Green Chilies,
Beat the Yogurt until it has a smooth consistency, then add the Baingan Mixture, Chilies and Salt as per taste.
The Baingan Ka Raita is ready for serving.
