Maharashtrian Style Kaju Matar Chi Usal

This is a simple step-by-step Recipe for making at home tasty and delicious typical Maharashtrian Style Cashew nuts Green Peas Usal or Kaju Matar Chi Usal preparation is called in Marathi. Preparation Time: 30 Minutes
Serves: 4 Persons

Ingredients
1 Cup Cashew nuts (Kaju)
1 Cup Green Peas
Sugar and Salt as per taste

For the Masala
1 Cup Coriander Leaves
4-5 Green Chilies
6 Garlic Petals
1 Teaspoon Cumin Seeds
2 Big Size Raw Green Tomatoes (chopped)

For the Tadka
2 Tablespoon Oil
1 Teaspoon Mustard Seeds
¼ Teaspoon Asafoetida

Preparation
Soak the Cashew nuts for an hour.
Boil the Green Peas and keep them aside.
Grind the Coriander Leaves, Green Chilies, Garlic Petals, Cumin Seeds, Raw Tomatoes into a paste.
Heat the Oil in a Kadai and add the Mustard Seeds, Hing, and grounded Masala.
Fry the Masala for 5-7 minutes on a slow flame.
Then add the Cashew nuts, Green Peas and a cup of Water.
Mix it well and cook for 5 minutes on a slow flame.
Add the Sugar and Salt as per the taste. Garnish with Coriander Leaves.
Serve hot with Paratha or Puri.
