This is a step-by-step Recipe for preparing at home authentic and traditional Maharashtrian Style Sprouted or Mod Aalele Harbara Usal. This is a healthy and nutritious Usal prepared using Harbara or Whole Brown Bengal gram /Chickpea or Sabut Kala Chana in Hindi.

Maharashtrian Style Sprouted Harbara Usal Preparation Time: 25 Minutes
Serves: 4 Persons

Ingredients
2 Cup Sprouted Harbara
One Small Onion (chopped)
Salt as per taste
Two Kokum (Amsul]
1 Tablespoon Coconut (grated)
1 Tablespoon Coriander (chopped)

For the Tadka
1 Tablespoon Oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
5-6 Curry Leaves
¼ Teaspoon Asafoetida
5-6 Garlic Petals (mashed)
¼ Teaspoon Turmeric Powder
1 Teaspoon Red Chili Powder
1 Teaspoon Garam Masala

Preparation:
Cook the sprouted Harbara and keep aside.
Heat the Oil in a Kadai and add the Mustard Seeds, Cumin Seeds, Curry Leaves, Asafoetida, Garlic, Onion and sauté for 2-3 minutes on a slow flame.
Then add the Turmeric Powder, Red Chili Powder, Garam Masala, Salt and ½ cup of Water and then cook for 5-7 minutes on a slow flame.
Add the Coconut, Coriander and Kokum, mix it well, and cook for 2 minutes on a slow flame.
Serve hot with Bhakri or Chapatti.
