Prepare Rajasthani Rajkachori at Home

This is a Recipe for Rajasthani Rajkachori, a rich fast food snack, which is a variation of the popular fast food snack the Kachori with the addition of stuffing and garnishing, which make it a rich and filling Chaat. The recipe is given in a simple step-by-step manner to make the preparation easy and uncomplicated to prepare at home. The stuffing and garnishing can be modified as per taste and liking.

Preparation Time: 60 Minutes
Serves: 4 Persons

Two Cups Refined Flour (maida)
¼ Cup Semolina (suji)
1 Tablespoon Oil (hot)
1 Tablespoon Baking Soda
Salt as per taste
1 Teaspoon Red Chili Powder
1 Teaspoon Chaat Masala
1 Tablespoon Coriander (chopped)
¼ Cup Black Gram
¼ Cup Moong Moth
Three Potatoes (boiled)
½ Cup Pithi (dal stuffing)

For Garnishing
Tamarind Chutney
Mint Chutney
Curd (thick)
Oil for frying the Kachori

Mix the Maida, Suji, and Salt, hot Oil and warm Water, Baking Sosa and prepare Dough then keep it aside for about 15 minutes.
Mix the Pithi, Red Chili Powder, Salt, ½ Tablespoon Baking Soda. Prepare medium lemon size balls from the Dough. Then fill a tablespoon Pithi inside the ball and roll them small size Puri.
Heat the Oil in a Kadhai and deep-fry the Puries until color changes in to light brown. Keep them for cooling.
Prepare stuffing of boiled Potato, Moth, Coriander, Chilies, and Black Gram and mix it well.
Stuff a tablespoon Potato mixture inside the Puree and garnish with Tamarind Chutney, Mint Chutney, Curd and Sev.
