Recipe for Vegetable do Pyaza

This is a simple Recipe for preparing rich and tasty Dhaba or Restaurant Style Vegetable do Pyaza. This is a top level Vegetarian Recipe; normally found in hotels.This main course dish, which is suitable for any kind of party can easily be prepared at home.

250 Gram Cauliflower
250 Gram Fresh Beans
250 Grams Tomatoes
250 Gram Carrots
1 Tea cup green Peas
2 Sliced Onions
2 Table spoon Fresh Cream
½ Tea spoon Sugar
3 Table spoon Ghee
Salt to taste
10 Kashmiri Chilies (without seeds)
2 Tae spoon Coriander seeds
¼ Tea spoon Turmeric powder
1 Tea spoon Cumin seeds
1 Inch Pieces Ginger
4 Cloves Garlic
½ Tea spoon Mustard Seeds
1 Tea cup of Water

Prepare a paste by grinding together chilies, coriander seeds, Turmeric powder, Cumin seeds, Ginger, Clovers and Mustard seeds in a mixer. Cut the vegetables in to small pieces. Heat the ghee and fry the sliced Onions. Remove the Onions and fry the paste for 2 to 3 minutes. Add the vegetables and fry again for one minute. Add the fried Onions and one tea cup of water. Cook until the vegetables are tender and the gravy becomes thick, add the cream, Sugar and Salt and mix it well.
