This is a Recipe for preparing restaurant or dhaba style Matar, Aloo, and Gajar [Green Peas, Potato, and Carrot] Gravy. This is a popular and traditional Punjabi recipe. The preparation given in this article is for a thickish Gravy, which tasts good with Parathas or Puris.
250 Gram fresh green Peas
4 Boiled Potatoes
100 Gram Carrot
2 Tomatoes, chopped
Few bay Leaves
1 Tea spoon Cumin and mustard seeds
2 Green Chilies
8 Garlic Cloves
1 Tea spoon Coriander seeds
½ Table spoon Khus-khus
1 Table spoon fresh Coconut
Cut pieces of Potatoes and Carrots and fresh Beans and keep aside.
Heat the Oil in an utensil.
Add bay leaves and Cumin and Mustard seeds.
Add the Masala and sauté till golden brown.
Add Tomatoes and fry for 5 minutes.
Add the cut Potatoes, Gajar and Mutar with salt and Stir fry for 5 minutes.
Then add 1 glass of water and simmer for 10 minutes.
Garnish with Coriander and Butter. Serve hot.
