Recipe for Stuffed Karela [Bitter Melon]

This is an authentic and unique Recipe for preparing at home Stuffed Karela [Bitter Melon]. The Bharli Karli as this Karela preparation in Known in Marathi or Bharwa Karela in Hindi is popular vegetable preparation in most Indian States.

Preparation Time: 45 Minutes
Serves: 3-4 Persons

Ingredients
250 grams small fresh Karela [Bitter Melon]
2 Table spoon fried Besan (gram flour)
2 Onions chopped
½ Tea spoon Methi seeds
1 Pinch of Hing
2 Table spoon Dhania powder
1 Table spoon Jeera powder
1 Table spoon crushed Saunf
1 Tea spoon Amchur powder
½ Tea spoon Haldi powder (Turmeric powder)
1 Tea spoon Chili powder
1 Tea spoon Garam Masala powder
Salt to taste
1 Table spoon groundnut powder and Oil

Preparation
Scrape a little part of the Karela skin, slit vertically and remove the seeds. Smear the inside and outside with Salt and keep aside for two hours. After two hours, squeeze out the bitter part of the Karela.
Prepare masala by mixing fried Besan, groundnut powder and all other masala items except Onion, Hing and Methi seeds. Add some oil and Sugar (optional). Fill all Masala in the Karela and tie each with a thread.
In a deep and heavy bottom kadhai heat Oil and season with Hing and Methi seeds. Add chopped Onion and fry for 2 minutes. Add stuffed Karela in it and cook carefully till done. Sprinkle some water while cooking if desired.
Remove the thread before serving and enjoy the delicious Karela with hot and crisp Parathas.
