This is a Recipe for making at home typical traditional Malvani Style Amboli. Amboli is a kind of thick Dosa that is a substitute for Chapati and is especially popular in the Konkan region of Maharashtra.

Amboli, which is prepared using Rice and Urad Dal as the main ingredients is normally served along with fish, prawns, chicken or mutton curry or Rassa or Amti as this curry is called in Konkan.

The Amboli is also a healthy and nutritious dish that is easy to digest and it can also be served for breakfast along with coconut chutney.

Soaking Time: 7-8 Hours
Fermentation Time: 7-8 Hours
Preparation Time: 10 Minutes
Serve: 4-5 Persons

Ingredients:
2 Cups Rice
1 Cup Urad Dal
1 Tea spoon Fenugreek Seeds
Salt as per taste
Oil for frying the Amboli

Preparation
First clean and wash the Rice, Urad Dal and Fenugreek Seeds separately and soak for 7-8 hours.

Then blend them together in a mixer like a thin paste and then cover with a plate and keep it aside for 7-8 hours for fermentation. The batter should have the thin and drooping consistently of a Dosa batter.

While preparing the Amboli add Salt and mix it well.

Heat the non stick pan or cast Iron Tawa and apply the Oil over the pan and pour one cup of the Amboli batter over the pan and spread it evenly for making a thick Amboli.

Then, cover the pan and cook on a slow flame for 1-2 minutes and then remove the cover and cook from both the sides on low flame. Prepare all the Amboli using the same procedure.

Serve the Amboli hot with Chutney or Chicken Gravy or Mutton Gravy.
