Tasty Sweet Corn Upma

This is a simple to follow step-by step Recipe for preparing at home Corn Upma or Makyachya Kanshacha Upma or Upit as this snack is know in the Marathi language.
The Fresh Corn Upma is a filling snack, which can also be served as a part of the main course meals.

Preparation Time: 30 Minutes
Serves: 4 Persons

Ingredients
5 Corn Cobs (slightly hard)
¼ Cup Coriander
¼ Cup Coconut (shredded)
1 Medium size Lemon Juice
Salt and Sugar as per taste

For the Tadka
1 Tablespoon Oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
½ Teaspoon Asafoetida
1 Big size Onion (chopped)
4 Green Chili (chopped)
8-10 Curry Leaves
½ Teaspoon Turmeric Powder

Preparation
Shred the Corn Cobs and keep them aside.
Chop the Onion, Green Chilies, Coriander and them aside.
Heat the Oil in a Kadai and add the Mustard Seeds, Cumin Seeds, Asafoetida, Onion, Green Chilies, Curry Leaves and sauté for a minute.
Then add the Turmeric Powder, Salt, shredded Corn Niblets, mix it well and cover the Kadai with a plate and cook for 5-7 minutes on a slow flame.
Remove the plate and add the Lemon Juice, Coriander, shredded Coconut, Sugar, mix it well and cook for 2-3 minutes on a slow flame.
While serving garnish with Coriander, Coconut and serve hot.
