Recipe for Gajar ka Halwa

This Recipe is for preparing at home the famous Grated Carrot Halwa, Gajar ka Halwa in Hindi and Gajaracha Halwa in the Marathi language. This Halwa dish is famous and popular all over India.

Gajar ka Halwa Preparation Time: 60 Minutes
Serves: 4 Persons

Ingredients
20 Medium- sized Carrots
4 Tea spoon Ghee
6 Cups Milk
1 Cups Sugar
A few Almonds or Cashew nuts
Saffron or Cardamom flavoring

Preparation
Scrape and cut carrots in to 2-3 cm pieces. Fill half jar with cut carrots. Run mixer at speed 1 till carrot is grated uniformly.
Remove and repeat process for rest of cut carrots.
Use 8 cups of grated Carrot to make the halwa, Fry Carrots in Ghee.
Add Milk and cook till very soft. Add Sugar, let simmer for an awhile, till Sugar dissolves and mixture thickness.
Add flavouring.
Garnish with blached and flaked almonds or Cashew nuts. Serve hot or cold as desired.
