Recipe for Phirni

This is a simple and easy to follow step-by-step recipe for preparing at home sweet, rich and delicious Kashmiri Style Phirni. The Phirni is an authentic and traditional Rice Pudding from Kashmir.

Preparation Time- 40 Minutes
Refrigation Time- 2 Hours
Serves- 5 Perons

Ingredients
1 Litre Milk
½ Cup uncooked Rice
1 ¾ Cups Sugar
4 Cardamoms
10 Badams
15 Pistachios
A few drops keora essence

Preparation
Soak the Rice in water for at least 2 hours.
Drain the water and dry the Rice thoroughly.
Place the dried rice in a jar and run the mixer at top speed 3 for 2 minutes until rice is finely powdered.
Bring the Milk to a boil on a high flame.
Stir continuously to avoid the Cream forming on top of the Milk.
Reduce heat and add the powdered Rice and Sugar, stirring continuously for 15 minutes until thickened.
Remove from the heat.
Add the Keora essence and Cardamom powder after cooling to room temperature.
Pour in a bowl and sprinkle the grated Badam and Pista on top.
Set for refrigeration for at least two hours before serving.
