This is a simple and easy Recipe for making at home healthy and nutritious Red Pumpkin Raita or Lal Kaddu Ka Raita as this Raita in called in the Hindi language especially for the Fasting Days.

Preparation Time: 15 Minutes
Serves: 4 Persons
250 Gram Red Pumpkin [Lal Tambda Bhopla] 2 Tablespoon Coconut (shredded)
2 Green Chilies (chopped)
1” Ginger (chopped)
Pinch of Cinnamon Powder
Salt and Sugar as per taste
For the Tadka
1 Tablespoon Ghee
¼ Teaspoon Cumin Seeds
Remove the skin of the Red Pumpkin and cut it into ½” thin slices shapes.
Heat the Ghee in a kadai and add the Cumin Seeds, Green Chilies, Ginger, Cinnamon Powder, Salt, Sugar and Red Pumpkin pieces and mix it well.
Cover the kadai for 2-3 minutes and then serve.
