Typical Maharashtrian Style Aamras Puri

This is a Recipe for preparing at home sweet, tasty and delicious typical Maharashtrian Style Aamras Puri. Aamras Puri is traditional Maharashtrian delicacy, which is prepared during the mango season. Tastes especially great when Hapus and Alphonso Mangoes are used to prepare the Aamras Puri.

Aamras Preparation Time: 2o Minutes
Puri Preparation Time: 30 Minutes
Serves: 6 Persons

Ingredients:
For the Aamras
6 Alphonso Mango (fresh mangoes)
½ Teaspoon Cardamom Powder
¼ Teaspoon Saffron [Kesar]
¼ Cup Milk
Sugar as per taste

For the Puri
3 Cups Wheat Flour
2 Tablespoon Oil
1 Teaspoon Sugar
Salt as per taste
Oil for frying the Puri

Preparation
For the Amras: Wash the Mangoes, peal them and cut into small pieces.
Mix the Mango pieces, Sugar, Milk, Cardamom Powder, Saffron and blend nicely in a blender.
For the Puri: Mix the Wheat Flour, Salt, hot Oil and Water and prepare a thick Dough.
After 20 minutes prepare 20 equal balls from the Dough and roll the each ball into Puri size shapes.
Heat the Oil in a kadai and deep-fry the Puries.
Serve the Puris with chilled Aamras.

Tip: First, prepare a Dough and keep it aside.
Then prepare the Aamras and keep it into the refrigerator for chilling and then prepare the Puris.
