Beat Eggs well with a fork or a whisk until yolks and whites are thoroughly combined and no streaks of whites can be seen. Heat the pan, Wipe thoroughly with a clean cloth. Add the Oil. When Oil is heat ten add Egg mixture, moving the mixture continuously with a fork until lightly set. Remove from the heat. Fold the mixture over into half at right angles to the handle. Gently lift out and serve in the centre of a flat silver dish. Neaten shape if necessary and serve immediately.
