Appetizing Vegetables Noodles Soup

This is a Recipe for making at home tasty and appetizing typical Chinese Style Vegetables-Noddles Soup.  have also given a simple procedure of making vegetable stock, which has to be added to this Soup.

Preparation Time: 30 Minutes
Serves: 4 Persons

Ingredients
100 Grams Noddles (plain)
1 Cup Cabbage (finely chopped)
½ Cup Carrot (shredded)
1 Cup Spring Onion [chopped]
1 Tablespoon Oil
1 Teaspoon Ginger (shredded)
1 Tablespoon Soya Sauce
1 Teaspoon Sugar or as per taste
4 Cup Vegetable Stock
Salt as per taste
Black Pepper Powder as per taste

Preparation
In a Kadai add a teaspoon Oil and Noddles and fry them slightly and then add 4-5 cups water and cook the Noodles and then pour them over a strainer and then keep them aside. This separates the Noodles from the water, the water can be thrown away.

For the Vegetable stock: In an another Kadai add 2 Cups Chopped Vegetables (carrot, Beans, Tomato, Cabbage, Cauliflower, Bottle gourd) and 5 cups Water and boil them for 5-7 minutes on a slow flame.
Then filter and separate the water through a strainer. This Water is called Vegetable Stock, the vegetables can be discarded.

In a Kadai add remaining Oil and Chopped Cabbage, Shredded Carrots and the Chopped Spring Onion and fry them for 2-3 minutes.
Then add the Vegetable Stock, Noddles, Soya Sauce, Sugar, Salt and Black Pepper Power and boil for 2 minutes.

Serve Hot.

  1. I’m a fan of quick cooking and healthy food. Taking a look at this recipe, I’m thinking that dehydrated vegetables will be a better alternative and a time saver.
