Recipe for Til Burfi

This is a recipe for preparing Til Burfi. Til Burfi or Tilachi Vadi is a Maharashtrian specialty sweet dish, which is prepared using Sesame Seeds as the main ingredient and is prepared specially for the Makar Sankranti festival for distributing it amongst friends and relatives as a sign of goodwill.

Til (Sesame) Burfi Preparation Time: 60 Minutes
Serves: 40 Wadi

Ingredients
2 Cups roasted Til powder (sesame seed powder)
½ Cup roasted groundnut powder
½ Cup cashew nut powder
2 Cups Sugar
100 Grams Khoya
1 Table spoon Ghee
½ Tea spoon Cardamom powder
¼ Tea spoon nutmeg powder
A few stands of Saffron
Silver Varak (optional)

Preparation
Roast polished Til and grind it to make a coarse powder. Roast groundnuts, peel and grind to make a powder.
Add a little water to the sugar. Stir constantly and make affine sticky syrup. (Put a drop in a cup of water). It should form a soft ball.)
Add Khoya, Til powder, ground nut powder, nutmeg and saffron to the syrup. Mix well, adding Ghee while mixing. Remove and spoon contents in to a greased dish. Smoothen with the back of a flat spoon or a katori. Garnish with Varak. Cut in to squares
