Recipe for Maharashtrian Vangyachi Bhaji

This is a Recipe for preparing traditional and authentic Maharashtrian Style Vangyachi Bhaji. (Brinjal Vegetable). You will love the taste if you are a lover of the peculiar flavor of Brinjals.

Maharashtrian Vangyachi Bhaji Preparation Time: 30 Minutes
Serves: 4 Persons

Ingredients
¼ Kg or 2 Big round Brinjals
2 Big Onions (chopped)
1 Tea spoon Red Chili powder
¼ Tea spoon Garam Masala
1 Table spoon Gram Dal (soak)
1 Table spoon Coriander (copped)
2 Table spoon Coconut shredded

For Tadka
1 Table spoon Oil
1 Tea spoon Mustard
1 Tea spoon Cumin Seeds
¼ Tea spoon Asafetida
¼ Tea spoon Turmeric

Preparation
First remove the upper green part completely and cut into medium size pieces; soak in Water for 2-3 minutes.
Heat the Oil in a Kadhai and prepare the Tadka then add Onion and cook for 2-3 minutes then add Gram Dal, Brinjal, Red Chili powder, Salt and 1 Cup of Water. Mix it well and cover with a plate put some Water over the plate and cook the Brinjal for 10-12 minutes on slow sim.
After that add Garam Masala, Sugar, Coriander and Coconut and cook for 2-3 minutes on slow sim.
Serve with Chapattis.
