Alu Vadi chi Amti

This is a Recipe for preparing at home authentic Maharashtrian Style Aloo Vadi Chi Amti or Colocasia Vadi Gravy (आळूच्या वड्यांची आमटी) The Alu Vadi Gravy is a traditional and popular dish in Maharashtra.
The Aloo Vadi Amti recipe given in this article is for preparing a spicy Gravy using a specially prepared fresh Garam Masala.
The Alu Vadi Gravy tastes equally delicious with Rice, Paratha or Puri.

Ingredients
For the Gravy Masala

 ½ Table spoon Oil
1 Cup Coconut (grated)
1 Small Onion (chopped)
7-8 Garlic Petels
1 Tea spoon Red Chili Powder
½ Tea spoon Garam Masala

For the Gravy
 1 Tea spoon Oil
1 Small Onion (chopped)
1 Table spoon Tomato (chopped)
¼ Tea spoon Turmeric Powder
Salt as per taste

For the Colocasia Vadi

Preparation
 For the Gravy Masala – Heat the Oil in a Kadhai and then add the Onion, Garlic and then fry for two-three minutes and add the grated Coconut, Red Chili Powder and Garam Masala and fry for two-three minutes on a slow flame. Grind the Masala.

Heat the Oil in a Kadhai and then add the Onion and  Tomato and fry for two-three minutes on a slow flame. Then add the Turmeric Powder, Salt , grounded Masala and a cup of Water. Cook the Masala for five minutes on a slow flame.

Then add Coriander and Colocasia Vadis and cook for two-three minutes,

Serve hot with Chapatti or Rice.
