This is a easy to follow step-by-step Recipe for preparing at home sweet, tasty and delicious Maharashtrian Style Potato Puran Poli or Batata Puran Poli as it is called in the Marathi language. This Potato Puran Poli can be served on festive occasions and religious ceremonies.

Preparation Time: 45 Minutes
Serves: 4 Persons
For the Stuffing:
2 Big size Potatoes
¼ Cup Khoya [Whole Dried Milk]
¼ Cup Sugar
2 Tablespoon Ghee
1 Tablespoon Milk
2-3 Saffron [Kesar]
1 Teaspoon Cardamom Powder [Elaichi Powder]
10-12 Raisins [Kismis]
4-5 Cashew nuts and Almonds Powder [Kaju-Badam Powder]
For the covering
2 Cups Wheat Flour [Gehun Ka Atta]
2 Tablespoon Refined Flour
1 Tablespoon Oil (hot)
Salt as per taste
Milk for preparing a Dough
For the Stuffing: Boil, peal and mash the Potatoes. Heat the Ghee in a Kadai and fry the mashed Potatoes until the color changes in to light brown. Then add the Khoya and fry for 1-2 minutes. Then add the Sugar, Cardamom Powder, saffron and cook for 4-5 minutes on a slow flame and keep it aside for cooling. Then after it, cools down, prepare four equal parts of the mixture.
Mix the Wheat Flour, Refined Flour, Salt, hot Oil and Milk and prepare a Dough. Keep it aside for about 10-15 minutes and then prepare 8 equal sized balls.
Preparing the Puran Poli – Roll two Dough balls into Puri sized shape. Insert the one portion of the Potato mixture, cover it with another Puri, press the sides of Puri, and roll it like a Chapati.
Heat the Tawa and roast the Puran Poli on both the sides.
Serve hot after adding Ghee.
