Recipe for Maharashtrian Style Ghosale Bhaji

This is a Recipe for preparing at home typical Maharashtrian Style Ghosale [smooth luffa] Bhaji. This an authentic and traditional vegetable preparation served during main course meals in Maharashtra.

Maharashtrian Style Ghosale Bhaji Preparation Time: 20 Minutes
Serves: 3 Persons

Ingredients:
2 Big size Ghosale
2 Tablespoon Gram Dal
Two Green Chilies (chopped)
1 Tablespoon Coconut (shredded)
1 Tablespoon Coriander Leaves
1 Teaspoon Cumin Seeds
Salt as per taste

For the Tadka:
1 Tablespoon Oil
1tTeaspoon Mustard Seeds
¼ Teaspoon Asafoetida

Preparation:
Wash and Peal the Ghosale and cut into medium size pieces. Soak the Gram Dal in water for 2-3 hours. Then grind the Gram Dal, Green Chilies, Salt, and Cumin Seeds and keep it aside
Heat the Oil in a kadhai and add the Mustard Seeds, Asafoetia, Ghosale pieces, mix it well and add ¼ cup Water and cover the kadhai with a plate and cook the Bhaji on a slow flame.
Then add the grounded Gram Dal, Salt and fry until slightly dry. Add Sugar, Coriander Leaves, Coconut mix it well and serve hot with Chapatti.
