Parsi Style Mutton Gravy

This is a Recipe for Parsi Style Mutton Gravy,the recipe is based upon the authentic traditional Parsi Style of cooking. This Meat Curry combines the flavor of the Mutton with the usual spices and the rich flavor of almonds and coconut milk.

The Recipe for preparing Parsi Mutton Gravy has been given is simple step-by-step method to make the preparation as easy as possible.

Ingredients
Half Kilograms Mutton
Half Kilograms Potatoes
Two Cloves Garlic
100 Grams Almonds [grind to make a paste]
1 Tablespoon Peanuts [grind to make a paste]
½ Teaspoon Lal Mirch [Red Chili Powder]
1 Tablespoon Coriander Seeds
1 Teaspoon Cumin Seeds
1/2 Teaspoon Turmeric Powder
1 Teaspoon Ginger
1 Tablespoon Gram Flour [Besan]
½ Green Pepper [chopped]
1 Cup Coconut Milk
1 Cup Tamarind Water
Salt as per taste
1 Tablespoon Cooking Oil

Preparation
Skin, peel and cut the Potatoes into round shapes.
Cut the Mutton into square shapes.
Mix the Grounded Almonds, Grounded Peanuts, Chili Powder, Coriander Seeds, Cumin Seeds, Turmeric Powder, Ginger and Besan and keep aside.
Then Boil the Mutton until it becomes tender.
In a frying pan heat the Oil and fry the Mixed Spices for about 5 minutes.
Add the Mutton along with the Stock and the Potatoes.
When the Potatoes are cooked, add the chopped Pepper, Coconut Milk and Tamarind Water.
Add the Salt as per taste and let it cook until a thick Gray is formed.

Tip- the Oil will start floating on top and this is when the Parsi Mutton Gravy should be removed from the fire.
