This is a Recipe for Chicken Kesar Matar Pulao, a popular Chicken rice preparation with the rich flavor of Kesar.
Chicken Kesar Matar Pulao Preparation Time: 45 Minutes
Serves: 5 Persons
900 Gram Chicken
2 Tablespoon Oil
1 Onion (chopped)
2 Teaspoon Paprika
1 Clove Garlic (crushed)
Salt and Pepper as per taste
300 Gram Rice
700 Ml Water (boiling)
¼ Teaspoon Kesar [Saffron] 180 Gram Peas
½ Tablespoon Parseley (chopped)
Heat the Oil in a large frying pan. Season the Chicken with Salt and Pepper and place it in hot Oil first with the skin side down. Cook over moderate heat, turning the Chicken.
Frequently to drawn it lightly all over. Keep the chicken aside. Add Onions to the Oil and cook slowly until softened but not colored. Add Paprika and cook for about 2 minutes, stirring frequently until it loses some of its red color. Then add Garlic and Tomatoes, cook the mixture over high heat for about 5 minutes to let the liquid from the Tomatoes evaporate. The mixture should be of dropping consistency when done. Then add Rice, Water, and Saffron and stir them all well together.
Return the Chicken to the casserole and boil it over high heat. Reduce the heat to set it simmer. Cover lightly and cook for about 20 minutes. Remove the Chicken and add Peas and Parsley. Cook for the further 5-10 minutes or until Rice is tender.
